Ingredients for 2 People
- For the crumble:
- 1.8 oz. Butter (cold)
- 2.3 oz. Flour
- 1.4 oz. Sugar
- 20 unpeeled almond
- 1 thyme sprig
- Balck pepper, to taste
- For the ricotta filling:
- ½ cup ricotta cheese
- 2 oz. powdered sugar
- Lemon zest, to taste
- ½ Vanilla bean
- For the pears:
- 2 pears
- 1.8 oz. Butter
- Brown sugar, to taste
- Lemon juice, to taste
- To decorate:
- De Nigris Balck Modena Pearls
- Thyme, to taste

Let’s start with the crumble!
Pre-heat the oven at 356°F.
In a bowl, place the butter, flour, sugar, unpeeled almonds, thyme and black pepper. Mix well and place the crumble on a baking tray with parchment paper. Cook in the oven for about 15 minutes.
In another bowl, add ricotta cheese, powdered sugar, lemon zest and vanilla bean. Blend all the ingredients well until creamy.
Wash and cut the pears in half, remove the core and cook in hot water with sugar and lemon juice until soft. In a pan, add brown sugar and the pears (with the peel upwards) and let caramelize.
Place the pears in a plate, add the ricotta filling and decorate with De Nigris Black Modena Pearls and thyme.
