Delicious seafood dish, Cod filet with crispy and caramelized cherry tomatoes and Mayonnaise, enriched with De Nigris Rosé Sweet Vinegar
Ingredients for 1 Person
- 4 cod fillets
- 1 ½ cup cherry tomatoes
- 1 egg
- ¾ cup vegetable oil
- 1 ½ tbsp De Nigris Rosè Sweet Vinegar

Pre-heat oven at 400 ºF
Wash the tomatoes and cut them in half, then arrange them on a baking sheet covered with baking paper together with a clove of garlic, olive oil, oregano, thyme, salt, and a bit of sugar. Cook in the oven until slightly crispy and caramelized.
Season the cod fillets well with oil and the spices used for the tomatoes. Bake for 35/40 minutes.
Meanwhile, use a blender to prepare the mayonnaise. Pour the ingredients in the following order: egg, vegetable oil, De Nigris Rosé Sweet Vinegar, and a pinch of salt. Blend everything well until the emulsion starts to form. To obtain a thicker mayonnaise, just add a little more oil.
When ready, place the mayonnaise and cod fillets on a plate, garnish with cherry tomatoes, and serve.
Note: The mayonnaise thanks to the De Nigris Rosé Sweet Vinegar will acquire a bittersweet note that will marry perfectly with the delicacy of the fillet and the sour note of the baked tomatoes.
